How do you know if a really sweet talking/romatic guy is falling for you or just 'talking you up'?

We know each other a couple of weeks only and have been out once...as friends to start with as I want to take it slowly. He sends the sweetest texts, calls me, tells me I'm beautiful and that he wants a girlfriend like me, someone refined. He's attentive and with all of this, my only reaction is to fall for him. Ok, I do like him but he's definitely sweet talking me on and he knows how to do it. We're 30. How do I know if he's just sweet talking or if he really means it?
